Irish Soda Bread












This is an American version. I make no claim that this is authentic to the homeland.  

IRISH SODA BREAD

Combine: 

4 c. flour

1/3 c. sugar

1 T. baking powder

3/4 t. baking soda

3/4 t. salt 

Cut in 1 stick butter and mix until it looks like cornmeal. (No big lumps of butter).

Add two beaten eggs,

3/4 to 1 c. raisins,

and approximately 1 c. of buttermilk. 

It should look like this:


Add or reduce buttermilk as necessary.

Shape into 2 loaves. Knead briefly to shape into rounds. Brush with beaten egg.  Place loaves on pan scattered with cornmeal. Bake at 350 degrees for approximately 1 hour.
